Just had my new kitchen cabinets topped with granite--all were leveled and no plywood underneath. Two of the cabinets are about the size of your bathroom cabinet.
I asked the granite guys why they didn't need plywood on top, and their answer made sense. If water gets to the plywood, it can cause it to separate, and there is no need for the wood because of the way they glue the granite to the understructure and because of the braces inside the cabinets.
They even did my long bar area that way--however, they explained that because there is a 4 inch overlap on one side and an 18 inch overlap on the other, and because there are X braces inside the top of the bar "box", there would be no sag, which can cause cracking.
